How to make Fried Mac & Cheese Bacon Balls

Colin Joliat

It’s been awhile since we’ve fried something at the Guyism Grill, but today’s the day. Fried Mac & Cheese Bacon Balls will take your gluttony game to the next level.

These heavenly little balls are packed with mac & cheese, crumbled bacon, and jalapenos. I didn’t know a way to work the peppers into the title, but rest assured they are a major component or this oral orgasm. They’re like jalapeno poppers, only 10x better.

It’s sad to see Velveeta week come to an end. We’ve had some good times making Velveeta Bacon Fudge and a Cheesy Bacon Breakfast Casserole, but now the Velveeta shortage will go unmentioned for the rest of eternity.

This is also the first time I think I’ve eaten a Ritz cracker since I was a kid. They still taste exactly the same, so if you can think back to your childhood you’ll know what to expect.

Nothing makes me happier than a whiskey rolling pin. This time I gave the honor to Bookers to celebrate Beam Inc. livin’ on the Ritz after the sale to Suntory.

Sure, you could use an actual rolling pins or just crush them with your mighty fists, but where’s the fun in that?

Some might call this the fearsome foursome. If you include the beaten egg just out of frame it could be the Furious Five, though that name has already been taken by Kung Fu Panda and Grandmaster Flash’s backup rappers.

You may have thought that the mac & cheese was the only place we were going to put Velveeta to use, but you were wrong. A couple cubes are being tossed in the middle of the balls for good measure. Two things you can never have too much of are cheese and bacon. And money, and whiskey, and condoms. Those last three aren’t in here, but they’re pretty helpful in life.

Making the balls can be tough. Make sure the mix is cold enough to be sticky, otherwise they’re just going to fall apart. I know. It happened to me. If you’re still having trouble, start sprinkling the cracker crumbs on as your form the ball instead of waiting the end.

I’ll admit, Fried Mac & Cheese Bacon Balls were a pain in the ass to make because of trying to shape them. If you can handle that though you’re in for a treat. They were probably the best version of fried mac & cheese I’ve ever had, and I’ve had a lot. Maybe just send this to someone else, and tell them to make some for you.

This is the last of the Velveeta recipes. I upped the bacon content because obviously they have no idea what they’re doing over there, and I also traded in their picked jalapeños for fresh.

Ingredients:

  • 1 pkg. (14 oz.) Kraft Deluxe Macaroni & Cheese Dinner
  • 48 Ritz crackers, finely crushed (about 2 cups), divided
  • 1 egg, beaten
  • 8 slices Bacon, cooked, crumbled
  • 2 tsp. chopped jalapeño
  • 4 oz. (1/4 of 16-oz. pkg.) Velveeta, cut into small cubes
  • Vegetable oil

Instructions:

  1. Cook bacon until crisp.
  2. Make Mac & Cheese according to box.
  3. Stir in 1 cup cracker crumbs, egg, bacon and jalapeno peppers until blended.
  4. Allow to cool for at least 20 min.
  5. Shape into balls smaller than my novelty size ones.
  6. Stuff more cheese inside each ball.
  7. Roll in remaining cracker crumbs until evenly coated.
  8. Realize Step 7 is a pain in the ass and sprinkle crumbs on instead.
  9. Place in single layer on waxed paper-covered baking sheet.
  10. Heat oil to 375ºF in deep fryer.
  11. Add balls, a few at a time; cook 2 min. or until golden brown.
  12. Drain well.
  13. Drizzle Sriracha all over them and eat.
  14. Repeat.
